Authentic Chinese cookery ingredients are now available in the UK throughout year, not only from the "Chinatowns" of major cities, but also from local supermarkets. This is a guide to what ingredients are available, where to buy them and how to prepare them, incorporating more than 100 ingredients and presenting at least two recipes for each one, to demonstrate its versatility. The extensive illustrations include cut-outs of each ingredient in its different forms, cultural pictures of China, and photographs of the recipes.
